Parwal kaju curry .

 
Preparation Time : Approximately 30 minutes
Cooking time : 40 to 50 minutes
Serves : 5 to 6

Ingredients :                                                                                                                     
Parwal - 20 
Cashew (kaju) - 15 pieces
posto(khus khus)- 1/2 tbsp
tomato - 1 big
ginger - 1 inch size
garlic - 4 to 5 cloves
red chili - 4
red chili powder - 1/2 tsp
turmeric powder - 1/2 tsp
curry powder - 1 tsp
garam masala powder - 1/2 tsp
salt to taste
cumin seeds - 1/2 tsp
1 bay leaf
cinnamon - 1 stick
cloves(laung) - 4 to 5
cardamom(elachi) - 2
water as required
kasuri methi - 1/2 tbsp
 butter - 3 tbsp

Method of Preparations:
1.Peel parwal cut into two halves .Heat 1 tbsp butter in a pan and fry parwal pieces for 10 minutes or till parwal gets soft.
2.Remove fried parwals ,add rest butter in the same pan.
3.In the mean time make a paste of cashew nuts, posto , tomato ,garlic , ginger and red chili by adding water.
4.Add cumin seeds , bay leaf, cardamom , cloves and cinnamon , fry for 2 minutes.
5.Add the masala paste and fry the masala till oil gets separated from masala.
6.Add turmeric powder , red chili powder , curry powder and garam masala and fry for more 3 minutes.
7.Add fried parwal , salt to taste ,water 1/2 cup and cook till the gravy thickens.
8.Add kasuri methi and mix well.
9.Serve hot with your choice of indian breads .
