Coconut mawa ladoo.

 Preparation time :10 minutes
Cooking Time : 20 minutes
Makes -8-10 ladoos

Ingredients:

Mawa- 1/2 cup
Fresh grated Coconut - 1cup
Desi ghee- 1 tbsp
powdered sugar- 1 cup
green cardamom powder- 1/2 teaspoon

Preparation:
1.Heat ghee in a non stick pan,add coconut and fry for 10 minutes in low flame.
2.Add mawa and fry for more 10 minutes.
3.Let it cool for 5-10minutes ,add powdered sugar and cardamom powder and mix it properly.
3.With the help of soft hand shape it as ladoo.


Masala poori - South Indian chat.

The very first day I came to Chennai I missed the chat items that we were having in Delhi.in a day in tea break I was outside with friends and saw some stall selling pani pooris ,masala pooris , my taste buds told me to taste and I can't resist myself of tasting it and than I loved the taste.It is somehow taste compared to the chat items available in Delhi as murmura , corn flakes , pooris are only used with boiled chick pea gravy.So guys One day I came across the masala poori stall and tasted it .It was just awesome.Today I tried it in my kitchen and it was awesome.Here I am posting the recipe of it and you must try and taste it with your family and friends.

 

Ingredients:Boiled white chick pea- 1 cup(boiled by adding 1 tsp garam masala and salt to taste)
golgappa ,poori - 8 to 10
fried corn flakes- 1/2 cup
murmura/bhel- 1/2 cup
chopped onion - 2tbsp
roasted jeera powder- 1/2 tsp
chaat masala- 1/2 tsp
red chili powder - 1/2 tsp
black salt to taste

Method:
1.Place boiled chick pea in a plate.
2.Crush the poori and add it to the chana.
3. Add murmura and corn flakes into it ,add the dried masala and black salt.
4.Garnish with chopped onion.

Moong dal poori -marwari recipe.

Preparation time : 1 hour
Cooking Time : 1 hour

Makes : 10 to 12

Ingredients:

soaked moong dal - 1 cup
gram flour(besan) - 1/2 cup
curd - 1/2 cup
carom seeds - 1/2 teaspoon
salt to taste
red chili powder - 1/2 teaspoon
water 1/ 2 cup
oil for frying

Preparation:
1.Coarsely grind moong dal ,Mix all the ingredients in a large bowl.
2.Knead with a little water at a time into a semi soft dough.
3.Divide the dough in 12 portions and roll each out to a 2 diameter disc .
4.Heat oil in kadhai fry the disc evenly on both the sides,repeat for other pooris.
5.Serve hot with chana or aloo or the dish of your choice.


Dahi Bhalla papdi -Indian chaat.

Chaat items are available everywhere in india but the content and taste are different .Basically in north india you will get dahi bhlle , bhalla papdi , raj kachodi , golgappe , lachha tokri , aloo tikki .In south you will get masala poori , masala chana , in east you will get masala mudhi , dahi vada , ghuguni , aloo chaat , gupchup and in mumbai side you will get ragda patties , pav bhaji , bada pav , usal pav , missal pav and the world famous bhel poori amd sev poori.Here I am going to teach you how to make the dahi bhalle papdi chaat extremely popular in northern part of India.

Ingredients:
Bhalle - 6 pieces
khasta papdi - 6 pieces
Boiled potato - 1 (cut into small cubes)
chopped onion- 1 tbsp
pomegranate pearls- 1 tbsp
tamarind chutney -1 tbsp
green coriander chutney -1 tbsp
roasted jeera powder - 1 tsp
red chili powder - 1 tsp
sev- 1 tbsp
curd- 1/2 cup mixed with 1 tsp sugar
chopped coriander leaves for garnishing

 Method:
1.In a plate place khasta papdi.
2.place bhalla above the papdis.
3.Spread chopped potato.
4.Spread 1/2 cup of curd mixture,add pomegranate seeds.
5.Add chopped onion , roasted jeera powder ,chili powder , tamarind and coriander chutney.
6.sprinkle sev and chopped coriander and serve immediately as evening snacks.



Carrot Ladoo - galar ladoo-diwali recipe.

Preparation time :10 minutes
Cooking Time : 20 minutes
Makes -10-12 ladoos

Ingredients:

grated carrot- 2 cups
sooji- 1/4 cup
milk -1/4 cup
Desi ghee- 1/2 cup
powdered sugar- 1cup
green cardamom powder- 1/2 teaspoon
kismis - 2tbsp
chopped cashew nuts- 1 tbsp
chopped almonds- 1 tbsp

Preparation:
1.Heat ghee in a non stick pan,add grated carrot and fry for 15-20 minutes in low flame.
2,add milk and mix well and fry for 5 minutes in low flame.
3.In another pan dry roast sooji for 3-4 minutes.
4.Add dry fruits to the carrot mixture,add roasted sooji ,mix well and cook till the mixture get dry.
5.Switch off the gas ,add powdered sugar , cardamom powder to the carrot mixture and knead it.
6.Make ladoos .


Prawn curry(odisha style).

Preparation Time - 20 minutes
Cooking time - 30 minutes
Serves -4

Ingredients:
Prawn -250grams
Onion - 1 big(chopped)
Tomato chopped - 5 tbsp
Ginger garlic paste - 2 tbsp
turmeric(haldi) powder- 1/2 tsp
red chili powder- 1/2 tsp
curry powder - 2 tsp
oil- 2 tbsp
salt to taste
For prawn marination:
turmeric powder- 1 tsp
salt to taste
water 1/4 cup


Preparation:
1.Remove the tail of prawns,Marinate the prawn for 15 mins with haldi powder and salt.
2.Heat oil in a frying pan and fry prawns for 4-5 minutes in medium flame.
3.Heat oil in a pan ,fry chopped onion till golden brown.
4.Add ginger garlic paste and fry till raw smell goes.
5.Add turmeric powder , red chili powder , curry powder salt to taste and fry for 1 minute.
6.Add chopped tomato  and mix it properly and fry for 10 minutes .add the fried prawns and cook for 3 minutes by adding water.
7.Serve hot with steamed rice



Aloo pakoda/onion pakoda/capsicum pakoda.

Pakode ,the name itself is so tempting and mouth watering.The rain and teatime is always accompanied by hot pakodas and everyone loves to have it .The hot pakodas are served with lip smacking and spicy chutney that enhances the taste of simple pakodas.In every Indian houses every single lady know how to prepare it as it is quite easy recipe.Onion pakodas are world famous and these days so many varieties of pakodas are made using varieties of vegetables like cauliflower , capsicum , brinjal ,potato ,spinach , methi and the list continues.Below are some of those.

Ingredients:
Besan(gram flour)- 2 cups
Potato medium sized -2 cut into round shape
Onion - 2 big sized -sliced
Capsicum - 1 big -cut into rings
Ajwain(carom seeds)-1 teaspoon
Red chili powder - 1 tsp
salt to taste 
water 1/2 cup
Oil for deep frying

Method:
1.Mix besan , water , salt , red chili powder and carom seeds and make a mixture.
2.Heat oil for deep fry.dip potato slices in besan mixture and fry from both the sides till golden brown.
3.Dip the capsicum rings in besan and fry from both the sides.
4.Mix onion slices in the besan mixture and in lemon size ball fry from both the sides.
5.Serve hot with green chutney.








Kalakand -festive sweets.

Kalakand is one of the famous sweet .When my father introduced me this sweet I was a kid and I loved every single bite of it.Earlier it was available only in shops but as these days the shops are not using good things and mixing some other ingredients in the sweets in festival time we prefer it try it home itself.Internet is the best place to fetch the best sweet dish recipes and dry at our side.I too did the same and here comes the outcome.

Preparation Time -2 hours
Cooking time - 30 mins
Makes -10-12 pieces

Ingredients:
Fresh grated paneer - 150 grams
Condensed milk - 150 ml
Mawa/Khoya - 100 grams
cardamom powder - 1 tsp
pista for garnishing

Method of Preparation:
1.Heat mawa in a pan and fry by stirring continuously for 10 minutes in low flame.
2.Add crushed paneer, mix properly and fry for 2 minutes .
3.Add condensed milk ,cardamom powder and fry by stirring continuously till the mixture got thicken.
5.Grease the tin with little ghee and spread the mixture finely .
6.Garnish with chopped pista and refrigerate for 2 hours.
 



Mawa Peda

Peda is one of my favorite sweets. As a child it was my most preferable sweets as it was easily available and price was also very low.Only in one rupee i was getting one piece of it so it was a pocket friendly food for me. It is the sweets loved by all my family members.So, as this Diwali I tried to make all the sweets by my own , I want to give the best try to it and it came out excellent.So the presentation also done by me so differently.
Preparation Time :20 minutes
Cooking Time : 20 minutes
Makes 10-12 pedas

Ingredients:
Mawa - 180 grams
Powdered Sugar - 100 grams
Ghee - 1 tbsp
cardamom powder - 1 tsp
Cherry and pista for garnishing

 Preparations:
1.Heat Ghee in a pan ,add mawa and fry for 20 minutes in low flame.
2.Place the mawa mixture in a plate , add sugar , cardamom powder and knead it properly.
3. Shape as pedas and garnish with cherry and pista.




Restaurant Style Paneer Curry.

Exotic vegetarian delicacies are never complete without paneer.There are so many varieties of dishes cooked with paneer and we people always love the restaurant style curries as they are quite different from the dishes prepared in our homes. We think that the curries prepared in restaurants are very difficult to prepare but its never true . The only difference is that those dishes are cooked by trained chefs and we people are not experts like them .But as we all know practice makes a man perfect we can practice like they do and make great dishes like them .
   This is my first try to a restaurant style paneer dish.It came out very tasty and mouth watering.It tasted excellent with roti.
Preparation Time:2 hours
Cooking Time - 1 hour
Serves- 4

Ingredients:
Paneer - 200 grams (cut into slices)
Capsicum - 1 medium (chopped)
Onion paste -4 tbsp
tomato puree - 1/2 cup
curd - 1/4 cup
jeera powder - 2 tsp
coriander powder- 2 tsp
dry ginger powder - 1 tsp
garlic powder - 1 tsp
amchur powder - 1/2 tsp
red chili powder - 2 tsp
turmeric powder - 1tsp
Milk - 2tbsp
butter- 2 tbsp
Garam Masala powder - 1 tsp
Salt to taste

Preparations:
1.Marinate paneer slices with curd ,  1/2 tsp dry ginger powder , 1/2 tsp garlic powder , 1 tsp jeera powder , 1 tsp red chili powder , salt to taste and refrigerate for 2 hours.
2.Microwave the paneer pieces in 400deg F for 20 minutes.
3.Heat butter in a pan , add onion paste and fry for 15 minutes in low flame.
4.Add tomato puree and fry for more 10 minutes.
5.Add red chili powder , turmeric powder , jeera powder , coriander powder , dry ginger powder , garlic powder , amchur powder and cook for 5 minutes.
6.Add salt to taste .Add chopped capsicum and cooked paneer slices along with the leftover marinated paneer masala.Cook for 10 minutes.
7.Serve hot with plain rice or roti.


Mushroom capsicum paratha.

Cooking time : 20 minutes
Makes - 6-8 paratha

Ingredients:
Wheat flour(atta) - 200 grams
2 medium sized onions - finely chopped
1 medium sized capsicum - finely chopped
musroom keema - 4 tbsp
red chili powder - 1/2 tsp
turmeric powder - 1/2 tsp
jeera powder - 1 tsp
dhania powder - 1 1/2 tsp
Oil for making parathas.
jeera - 1 tsp
salt to taste
water for kneading

Preparations:
1.Heat 1/2 tbsp oil in a pan ,add jeera to splutter , add chopped onion , capsicum , mushroom ,red chili powder , turmeric powder , cumin powder , coriander powder , salt to taste and fry for 5 minutes.


2. Knead the atta with water , red chili powder and salt.
3.Make small balls ,make two rotis and stuff the masala in between both and fry it in a tawa till it is cooked.

Moong Dal Ladoo- Diwali Sweets.

Preparation time : 20 minutes

Makes -8-10 ladoos

Ingredients:

Moong dal- 1 cup
Besan : 1/2 cup
Desi ghee- 1/2 cup
powdered sugar- 1/2 cup
green cardamom powder- 1/2 teaspoon

Preparation:
1.Dry roast moong dal till golden brown ,dont burn it.Grind the roasted moong dal into a smooth powder.
2.Dry roast besan for 1o minutes.
3.Mix powdered moong dal , besan  , ghee ,powdered sugar and cardamom powder properly .
4.With the help of soft hand shape it as ladoo.
5.Garnish with almonds.

Sukhe Kale Chane ki subji.


Kala chana is one of the preferable chana in every indian houses.As it is easily digestible by almost everyone ,it is prepared at least once in a week .So many varieties of curries and dry preparations are made using it.This time it is going to be a dry curry made with lots of spices and very tasty.This is a tried and tasted recipe more than 100 times in my home as we people are a great fan of black chana curries.It is best accompanied with roti and raita.

Ingredients:
Black chana - 150 grams(soaked overnight and pressure cooked for 15 minutes)

Ginger garlic paste - 2 tbsp
turmeric(haldi) powder- 1/2 tsp
red chili powder- 1/2 tsp
curry powder - 2 tsp
roasted jeera powder - 1/2 tsp
oil- 1 tbsp
salt to taste

Preparation:
1.Heat oil in a pan ,fry chopped onion till golden brown.
2.Add ginger garlic paste and fry till raw smell goes.
3.Add turmeric powder , red chili powder , curry powder , roasted jeera powder salt to taste and fry for 1 minute.
4.Add tomato puree and mix it properly and fry for 10 minutes .add boiled chana mix properly and cook for 3 minutes.
5.Serve hot with roti.

Healthy Shahi Tukda.

One fine day I was searching for some extra ordinary bread recipes as I was fed up eating sandwiches ,bread pakodas, pizzas, and all and found this on internet.This recipe took my attention as it was so different from all the bread recipes everyone must have tried.The breads are deep fried first in ghee , soaked in sugar syrup and than rabri is used as bread spread and garnished with lots of dry fruits which makes this dish royal. As this sweet dish carry loads of calories I just wanted to made it little bit healthy so instead of deep frying the breads , shallow fried it in non stick frying pan with spoonful of ghee followed by spreading some syrup with the help  of spoon rather dipping the whole fried bread in sugar syrup.Spreading rabri is the final step ,which I didn't replace with any healthy twist as with out rabri this dish is not worth tasting.
shahi tukda

The name itself is shahi tukda which means royal pieces .So please do try this sweet dish as you want either with loads of calories or with a healthy twist. 

 Preparation Time -20 minutes
 Cooking time - 10 minutes
 Serves -2

Ingredients:
Bread -2 slices
Sugar Syrup- 2 tablespoon
Rabri - 2 tablespoon
Almond and pista - 4-5 sliced
Ghee- 1 tablespoon

Preparations:
1.Heat Ghee in a Flat pan.
2.cut the sides of the bread and cut it into two halves in triangle shape.
3.Fry the bread slices in ghee till crispy.
4.Place the bread slices in a plate .
5.In bread slices add sugar syrup with the help of a spoon.
6.Spread rabri in bread slices .
7.Garnish with almond and pista.


shahi tukda

Rawa Coconut Burfi.

Preparation time : 10 minutes
Cooking Time : 30 minutes
Serves : 4

Ingredients:

Rawa(sooji)- 1/2 cup
Grated Coconut-1/2 cup
Desi ghee- 1/2 cup
Full cream milk- 1/2 cup
sugar- 3/4 cup
for garnishing sliced kismis

Preparation:
1.Heat ghee in a non stick pan,add sooji and fry for 10 minutes in low flame.
2.Add grated coconut and fry for more 4-5 minutes more.

3.Heat milk in another pan and when boiled add it to the coconut and sooji mixture.
4.Add sugar and cook till the ghee starts leaving the pan .
5.Take a silver tray, grease it with pinch of ghee and spread the mixture in it.Garnish with kismis.
6.Let it cool to room temperature or cool it in a refrigerator.
7.You can store it for 2 days and have it any time.

Maa Ladoo - roasted chana dal ladoo.

Preparation time : 20 minutes
Makes -8-10 ladoos

Ingredients:

roasted chana dal- 1 cup
Desi ghee- 1/2 cup
powdered sugar- 1/2 cup
green cardamom powder- 1/2 teaspoon

Preparation:
1.Grind the roasted chana dal into a smooth powder.
2.Mix ghee ,powdered sugar and cardamom powder properly with the chana dal powder.
3.With the help of soft hand shape it as ladoo.
4.Garnish with almonds.

Atta ladoo - festive and healthy ladoos.

Preparation time : 20 minutes
Cooking Time : 5- 6 minutes
Makes -8-10 ladoos

Ingredients:

Atta(wheat flour)- 1 cup
Desi ghee- 1/2 cup
powdered sugar- 3/4 cup
green cardamom powder- 1/2 teaspoon
for garnishing almond

Preparation:
1.In a microwave cooking bowl , mix wheat flour(atta) and desi ghee and cook for 5 minutes in maximum temp in 2 minutes time intervals.
2.Let it cool for 10 minutes.
3.Mix powdered sugar and cardamom powder properly with the atta mixture.
4.With the help of soft hand shape it as ladoo.
5.Garnish with almonds.

3.Let it cool for 5-10minutes ,mix fried rawa and coconut in a bowl add powdered sugar and cardamom powder and mix it properly.
3.With the help of soft hand shape it as ladoo.Garnish with roasted almonds.

Raagi oats Ladoo - healthy ladoos.

Makes -10-12 ladoos

Ingredients:

Raagi flour- 1 cup
oats - 1cup
Desi ghee- 1 cup
powdered sugar- 11/2 cups
green cardamom powder- 1/2 teaspoon
for garnishing cashew nuts

Preparation:
1.Heat ghee in a non stick pan,add raagi and oats and fry for 10-15 minutes in low flame.
2.Let it cool for 5-10minutes ,add powdered sugar and cardamom powder and knead it for a minute.
3.With the help of soft hand shape it as ladoo.Garnish with cashew nuts. 


Besan Ke Ladoo in just 10 minutes.

Preparation time : 20 minutes
Cooking Time : 5- 6 minutes
Makes -8-10 ladoos

Ingredients:

Besan- 1 cup
Desi ghee- 1/2 cup
powdered sugar- 3/4 cup
green cardamom powder- 1/2 teaspoon
for garnishing pista flakes

Preparation:
1.In a microwave cooking bowl , mix gram flour(besan) and desi ghee and cook for 2 minutes in highest temp.
2.Remove it from microwave and mix it properly and again cook for 2 minutes in high temp.
3.Remove from microwave and mix and again cook for one minute.
4.Let it cool for 5 minutes.
5.Mix powdered sugar and cardamom powder and knead it for a minute.
6.With the help of soft hand shape it as ladoo.Garnish with pista flakes .Have it any time with any one.
