Omelet Curry

Omelet curry is famous Bengali side dish for rice .People from West Bengal cook it with lots of love .It is one of the curry prepared with very less time and very tasty.

Preparation Time:20 minutes
Cooking time : 30 minutes
Serves - 4 to 5


Ingredients:
Eggs - 4 
onions - 2 big chopped 
green chili - 2 chopped
ginger garlic paste - 1/2 tbsp
tomato puree - 4 tbsp
red chili powder - 1 tsp
turmeric powder - 1/2 tsp

indian curry powder - 1 tsp
garam masala powder - 1/2 tsp
coriander leaves chopped - 1tbsp
cumin seeds - 1/2 tsp
oil - 3 tbsp
water - 1/2 cup
salt to taste
Method of Preparations:

1.Take a glass bowl , break the eggs in it , add pinch of turmeric powder , salt to taste , 1 tbsp chopped coriander and chopped green chili and half of the chopped onions.
2.Heat 1 tbsp oil in a pan and spread the egg mixture in it and  make an omelet.Turn from both the sides , remove it and cut into small pieces.Keep aside.
3.Heat oil in a pan ,add onions and fry till the onions turn golden brown.
4.Add ginger garlic paste and fry for 2 minutes.
5.Add turmeric powder ,red chili powder , Indian curry powder  , and fry for 1 minute.
6.Add tomato puree and cook for 3 to 4 minutes more .

7.Add cut omelet pieces , salt to taste ,mix well and cook for 1 minute .
8.Add 1/2 cup of water and mix well and cook till the gravy thickens.
6.Sprinkle garam masala, chopped coriander and remove from pan.
7.Serve hot with roti or steamed rice.


Spicy Egg curry in desi style.

Preparation Time:-30-40 minutes
Cooking Time:-25 minutes
Serves-3

Ingredients:
Boiled eggs-4
2 big size onion- chopped
2-3 big size tomato-chopped
cumin seed (jeera)-1 teaspoon
coriander seeds-2 teaspoon
cinnamon sticks-3 to 4(dalchini)
ginger garlic paste-2 teaspoon
cumin(jeera) powder- 2 teaspoon
coriander(dhania) powder-2 teaspoon
green chili-2-4
turmeric powder- 1 teaspoon
red chili powder-1 teaspoon
Refined soyabean or rice bran oil- 2 tablespoon
Salt to taste
coriander leaves(hara dhnia) for garnishing

Preparation:
1.Take oil in a pan and shallow fry the boiled eggs for 1 minute. Remove it from oil and cut it in halves.
2.Heat another pan and dry roast chopped onion ,coriander seeds ,cumin seeds and cinnamon sticks for 2 minutes. Add green chili and make a smooth paste of it in a mixer grinder.



3.Heat the same pan used for frying eggs. Add the grinded masala into the oil and fry it for 4 to 5 minutes in slow flame.
4. Add ginger garlic paste into the masala and fry for more 4 to 5 minutes.
5.Add turmeric powder, chili powder ,coriander  and cumin powder and fry for 1 minute.
6.Add chopped tomato and fry the masala for more 5 minutes.
7.Add the egg pieces into it and mix it .Cook it for another 4 to 5 minutes.
8.Sprinkle garam masala powder and chopped coriander leaves.\
9.Serve hot with Indian bread like roti or naan or you can have it with boiled rice.
