Anjeer burfi - figs burfi - festive sweets.
Anjeer burfi is one of the indian sweets having less calories and quite healthy too as anjeer has lots of health benefits.This recipe I took from one of the hindi monthly magazine with some changes and twists. From childhood i was living with some myths that preparing sweets is one of the toughest work but with increasing ages i understood that mithai making is not difficult, only we have to do hard work for getting the best sweets.
Preparation Time: 30 minutes
Cooking time : 20 minutes
Makes 16 to 20 burfis
Ingredients:
Khoya - 200 grams
anjeer - 1 1/2 cups
Ghee - 2tbsp
Roasted dry fruits powdered -2 tbsp (chopped)
chopped pista- 1 tbsp
sugar - 150 grams
cardamom powder- 1 tsp
Method of Preparations:
1.Soak anjeer in 1 1/2 cups hot water for 30 minutes.
2.Grind anjeer into a smooth paste without adding water.
3.Heat ghee in a frying pan ,add anjeer and fry for 5 minutes.
4.Add sugar , mix well and cook for 4 minutes.
5.Add khoya and fry for more 5 minutes.
6.Add dry fruits powder and cardamom powder and fry for 2 minutes.
7.Take a burfi tray , place butter paper in it .Spread the anjeer mixture in it.
6.Garnish with dry fruits and cut into burfi slices.

Chhena Poda - Paneer cake ..
If i am not wrong , people all over odisha love it .As the cooking is done authentically in charcoal , it is not preferred to make it in home .
But my fondness towards this sweet took me to give it a try .You will not believe that , i am trying to bake it from so many days but not getting the actual recipe in internet so was having fear of trying it .But today i got the courage as well as confident to bake it and the result was actually unbelievable.
Ingredients:
Fresh warm chhena - 250 grams
chhena water - 2 tbsp
powdered sugar - 150 grams
rice powder - 2 tbsp
ghee - 1 tbsp
condensed milk - 2 tbsp
milk - 2 tbsp
cardamom powder - 1 tsp
baking powder - 1/2 tsp
butter paper - cut in to the size of the baking tray you are using
Method of Preparations
1.Take the fresh chhena in a bowl and knead it well for 10 minutes or more.Fresh chhena makes the sweet more soft and tasty.The texture and flavor comes out perfectly when fresh chhena is used.
2.Add rice powder and powdered sugar and mix well.
3.Mix chhena water and ghee in the chhena mixture ,mix very well , prefer to mix it by hands .
4.Mix condensed milk and milk in a separate bowl very well and add it to the chhena mixture.
5.Lastly add cardamom powder and baking powder and transfer the mixture in to a greased pan plated with butter paper .Never forget to add butter paper as it is one of the main ingredient without which the texture will not come out perfectly.
6.Preheat the oven for 10 minutes in 200 deg cent(400 deg f).
7.Bake it for 20 to 30 minutes or till it is done(check it with a tooth pick , if it comes out clean than it is cooked or else cook for another 10 minutes.
8.You can also bake it in a pressure cooker baking method.Take out the whistle of the pressure cooker.Heat the pressure cooker in low heat for 10 minutes by placing 1 cup salt inside the pressure cooker.Place the baking tin inside the pressure cooker and close it (don't put the whistle) and bake it for 30 minutes in low flame.
9.Take out the baking tray , serve hot or cold as you like it .It is one of the tastiest sweet dish you will get in every single hotels in odisha.
Khoya Burfi - Festive indian sweets.
Preparation Time: 10 minutes
Cooking time : 15 minutes
Makes 12 to 15 burfis
Khoya - 200 grams
Roasted refined flour - 2 tbsp
Ghee - 2tbsp
Roasted dry fruits - 2 tbsp (chopped)
sugar - 150 grams
cardamom powder- 1 tsp
Method of Preparations:
1.Mix roasted refined flour and khoya.
2.Heat ghee in a frying pan ,add khoya and fry for 10 minutes.
3.Add sugar , mix well and cook for 2 minutes.
4.Add cardamom powder and roasted dry fruits .
5.Take a burfi tray , place butter paper in it .Spread the khoya mixture in it.
6.Garnish with dry fruits and cut into burfi slices.
Maida Burfi - festive sweets .
Preparation Time: 10 minutes
Cooking time :15 minutes
makes 15 to 20 burfis
Ingredients:
Maida- 1/2 cup
ghee- 1/4 cup
condensed milk -2 tbsp
hot milk - 1/2 cup
powdered sugar - 3 tbsp
cardamom powder - 1 tsp
green food color a pinch
Preparation Method:
1.Heat ghee in a pan , fry maida in ghee for 10 minutes in low flame.
2.Add condensed milk and mix well.
3.Add hot milk with food color , mix well and cook for 2 minutes.
4.Add powdered sugar and mix well.
5.Place butter paper in a plate and place the burfi mixture evenly.
6.Garnish with chopped pista .
7.Refrigerate for 1 hour .Have it any time and share with relatives and friends .
Rawa Kesari .
Ingredients:
sooji(rawa) - 1 cup
hot milk - 2 cups
sugar- 3/4 cup
ghee- 1/2 cup
cardamom powder -1 tsp
cashew nuts - 8 to 10
food color - as required
Method of prepration
1.Heat ghee in a frying pan and fry rawa and cashew nuts for 10 to 15 minutes in low flame .
2.Add milk , mix well so no lumps found.cook for 10 more minutes.
3.Add sugar , cardamom powder ,mix well .
4.Mix food color in 1 spoon water and add it to the rawa mixture.
5.Serve hot or cold as you like it.

Coconut mawa ladoo.
Preparation
time :10 minutes
Cooking Time : 20 minutes
Makes -8-10 ladoos
Ingredients:
Mawa- 1/2 cup
Fresh grated Coconut - 1cup
Desi ghee- 1 tbsp
powdered sugar- 1 cup
green cardamom powder- 1/2 teaspoon
Preparation:
1.Heat ghee in a non stick pan,add coconut and fry for 10 minutes in low flame.
2.Add mawa and fry for more 10 minutes.
3.Let it cool for 5-10minutes ,add powdered sugar and cardamom powder and mix it properly.
3.With the help of soft hand shape it as ladoo.
Cooking Time : 20 minutes
Makes -8-10 ladoos

Rawa Coconut Ladoo -Sooji nariyal ladoo.
Preparation time :30 minutes
Cooking Time : 20 minutes
Makes -10-12 ladoos
Ingredients:
Rawa- 1 cup
Fresh grated Coconut - 1cup
Desi ghee- 1 cup
powdered sugar- 11/2 cups
green cardamom powder- 1/2 teaspoon
for garnishing roasted almonds
Preparation:
1.Heat 1/2 cup ghee in a non stick pan,add rawa for 10 minutes in low flame.
2.Heat 1/2 cup ghee in another non stick pan add coconut and fry for 5-7 minutes.
3.Let it cool for 5-10minutes ,mix fried rawa and coconut in a bowl add powdered sugar and cardamom powder and mix it properly.
3.With the help of soft hand shape it as ladoo.Garnish with roasted almonds.
Plain Malpua using milkmaid- Indian sweets
Cooking Time- 25 minutes
Ingredients for Pua:
All purpose flour- 1 cup
2-4 tablespoon condensed milk
Milk as required
Oil for frying
Ingredients for sugar syrup:
2 cup sugar
1 cup water
1 teaspoon cardamom powder
Preparation
1.Heat oil in a flat non stick frying pan.
2.Make a smooth paste of all purpose flour ,milkmaid ,add milk and make a paste of dropping consistency.
3.By using a spoon drop the batter in flat frying pan ,make it round shape.
5.Fry from both sides till golden brown.
6.Deep the fried puas in sugar syrup and keep it for 10 minutes like that.
7.serve hot or as you want.
Sugar syrup
1.In a pan add a cup of water and two cups of sugar , make the sugar syrup and check it's consistency by dropping little of it in cold water.
