Matar paratha - best for winter breakfast.
Matar paratha is one of the easiest and tastiest breakfast option in winter .You can try this in winter as lots of fresh green pea available in the market .My mom never likes to try anything new but now a days I insist her trying this and guess what she loved it .Sharing the recipe so that we too can have it with your near and dear ones .
Ingredients :Wheat flour -3 cups ,boiled chick pea-1 cup ,chopped onion-2 tbsp,chopped coriander leaves-1 tbsp,chopped green chili-5 nos,ginger garlic paste-1 teaspoon ,coriander powder-1 teaspoon ,carom seeds(ajwain) -1 teaspoon ,water as required ,salt to taste .
Preparations :Make a soft dough with wheat flour by adding salt to taste and water .
Grind boiled chickpea ,mix all the ingredients and prepare for stuffing .
Take handful of dough ,make a hole on it ,stuff the mixture as shown in the picture .Make it round shape and prepare parathas .
Heat and pan ,put the parathas and cook it properly by adding oil .
Serve hot with curd or pickle .

Sweet corn cutlet.
Preparation time: 1 hour
Cooking time : 20 minutes
Makes - 11 ctlets
Ingredients:
Boiled potato : 2 big sized
peeled sweet corn: 1 1/2 cups
1 big onion - finely chopped
ginger garlic paste : 1 tsp
green chili chopped - 1 tsp
green coriander chopped - 1 tbsp
chaat masala - 1 tbsp
red chili powder - 1 tsp
roasted jeera powder - 1 tsp
bread crumbs - 3/4 cups
salt to taste
oil 1 tbsp + 4tbsp for shallow frying cutlets
Method of preparations :
1.Heat oil in a pan and fry onions for 2 minute.Keep it aside.
2.Peel potatoes and grate it and peel sweet corn.
3.Mix all the ingredients except oil and form a dough like mixture.
4.Take lemon sized balls and shape it as cutlets.
5.Heat oil for shallow frying in a frying pan and fry the cutlets for 5 minutes from both the sides.
6.Serve hot as starter or as breakfast with bread with tomato sauce.

Sweet Corn tikki.
Cooking time : 30 minutes
Makes - 10 tikkis
Ingredients:
Boiled potato : 2 big sized
peeled sweet corn: 1 1/2 cups
ginger garlic paste : 1 tsp
green chili chopped - 1 tsp
green coriander chopped - 1 tbsp
chaat masala - 1 tbsp
red chili powder - 1 tsp
bread crumbs - 4 tbsp
salt to taste
oil 1/2 tbsp + 4tbsp for shallow frying tikkis
Method of preparations :
1.Mash potatoes and peel sweet corn.
1.Heat 1/2 tbsp oil in a pan and fry peeled corn for 4-5 minutes with red chili powder and salt a pinch.
2.Mix mashed potato , fried sweet corn and rest of the ingredients and form a dough like mixture.
3.Take lemon sized balls and shape it as flat tikkis.
4.Heat oil for shallow frying in a frying pan and fry the tikkis for 5 minutes from both the sides.
5.Serve hot as starter with imli ki meethi chutney or hare dhanie ki chutney.

Namkeen Papdi - indian snack.
Cooking time - 50 minutes
Makes- 40 to 50
Ingredients:
Refined Wheat flour(maida) - 200 grams
Carom seeds(ajwain) - 1 tsp
cumin seeds - 1 tsp
oil - 3 tbsp
water as required
salt to taste
Method of Preparations:
1.Place all the ingredients except water in a big bowl.
2.Mix well for 4-5 minutes.
3.Make a soft dough of it by mixing little water at a time.
4.Keep it by covering for 5-10 minutes.
5.Make flat small papdi of the dough .
6.At the same time heat oil for deep frying.
7.Fry papdis in low flame for more than 10 minutes or till crispy.
8.You can make sev poori , papdi chaat of these papdis or you can have it in tea time as snacks.

Raj Kachodi-Indian chaat.
cooking time: 20 minutes
Makes 4 to 6
Ingredients:
For making kachodi and papdi
Refined wheat flour-100 grams
oil -1 tbsp
oil for deep frying
salt to taste
water as required for kneading
For filling:
Boiled black chana - 1/2 cup
boiled green moong- 1/2 cup
boiled rajma - 1/4 cup
boiled horse gram -1/4 cup
boiled potato cut into small cubes - 1 cup
dahi bada - 10 to 12(crushed)
papdi - 15 to 20(crushed)
1 tsp salt
For Garnish:
tamarind chutney - 6 to 8 tbsps
green coriander chutney - 8-10 tbsps
curd - 2 cups whipped
fine sev - 1/2 cup
black salt - 2 tsp
red chili powder - 3 tsp
roasted jeera powder- 4 tsp
pomegranate pearls - 1/2 cup
fresh coriander chopped - 1/4 cup
Method for making kachodi and papdi.
1.In a bowl mix refined wheat flour with oil and salt to taste .
2.Add water little by little and knead to a smooth dough.
3.Heat oil in a kadhai for deep frying .
4.Make small poori size papdi and make holes with the help of folk in pooris and fry in oil in medium flame till it is crispy.
5.Remove it from oil and let it dry it paper.
6.Roll poori and fry in low flame and prepare all kachodis like this.
Method for raj kachodi
1.Take a plate and place one kachodi in that.
2.Mix all the ingredients properly given in the filling ingredients and divide into 4-5 sections.
3.Make a hole in center of the kachodi and fill one portion of the filling.
4.Top with 3 tbsp of curd ,1 1/2 tbsp tamarind chutney , 2 tbsp green coriander chutney ,jeera powder and black salt.
5.Sprinkle pomegranate pearls ,red chili powder , fine sev and chopped coriander.
6.Serve immediately as evening snack.
