Potato in cococnut gravy(batate song).
Preparation time: 1 hour
Cooking time: 30 minutes
Serves: 4
Ingredients:
potato- 3 medium sized boiled and cut into small pieces
chopped coconut- 1 cup
onion- 1 big size(chopped)
hing - 1 pinch
red chili-8 to 10
coriander seeds- 2 teaspoon
Rice bran oil - 1 tablespoon
Salt to taste
Water - 1/2 cup
Preparation:
1.Dry roast coconut till it turns golden color
2.Dry roast red chili and coriander seeds .
3.Make a paste of roasted red chili , coriander seeds and coconut.
4.Heat oil in a non stick pan ,add hing , chopped onion ,masala paste and fry for 10 minutes in low flame.
5.Add cut potatoes, salt to taste and fry for 3-4 minutes.
5.Add water and cook it for more 10 minutes or till the gravy becomes thick.
6.serve hot with rice , chapathi or rice pitha.
